Five Super-Foods to Keep your Eyes Healthy

Eating right is not only the best way to keep your mind, body and soul healthy, but a way to keep your eyes in tip-top shape too. Not that this connection should come as a shock considering a healthy diet promotes a healthy heart, and much like the heart relies on arteries, the eyes rely on tiny arteries for oxygen and nutrients as well.

While there are endless foods that are good for your health, five foods in particular really stand out when it comes to promoting optimal vision and eye health. These foods can be easily incorporated into any diet and prepared in many creative ways!

CARROTS: Carrots are probably the top food people thing of when they think of foods that are good for your eyes. Carrots are high in beta-carotene, which is a nutrient that helps with night vision.

Other orange colored fruits and vegetables such as sweet potatoes, apricots and cantaloupes are also rich in beta-carotene.

KALE: Kale, as well as many other leafy green vegetables, is high in zeaxanthin and lutein, two nutrients found in healthy eyes and believed to lower your risk for age-related macular degeneration (AMD) and cataracts. Studies show that women whose diets were high in lutein were 23% less likely to develop cataracts than women whose diets were low in lutein.

Other good sources of lutein and zeaxanthin: other dark leafy green veggies, spinach, romaine lettuce, collards, turnip greens, eggs, broccoli, peas and corn.

SALMON: Many studies have shown that diets rich in omega-3 fatty acid from cold-water fish like salmon, tuna, sardines and halibut significantly reduce the risk of developing eye disease later in life. One study from Johns Hopkins found that those individuals with a diet high in omega-3 fatty acid were much less likely to develop age-related macular degeneration (AMD).

ORANGES & CITRUS: Oranges and other citrus fruits like grapefruits, lemons and tangerines are high in vitamin C, an antioxidant that is critical to eye health. Scientists have discovered that your eyes need high levels of vitamin C to function properly. Antioxidants can either prevent or delay cataracts and AMD.

Other good foods with similar benefits to oranges are peaches, red peppers, tomatoes and strawberries.

BLACK-EYED PEAS: All legumes, including black-eyed peas, kidney beans, lima beans and peanuts contain zinc, which is an essential trace mineral that is found in high concentration in the eyes. Zinc may help protect your eyes from the damaging effects of light.

Other foods high in zinc include oysters, lean red meat, poultry and fortified cereals.

Of course, frequent eye examinations with your optometrist are also critical to keeping your eyes healthy, but taking care of your body and eating right also plays a huge role in vision health.

How Cataracts Affect Your Vision

Sooner or later many of us will develop a cataract.  Here in brief is an explanation of how cataracts affect vision. 

Although the eyes are extremely complex organs, the principles of vision are quite simple: By adjusting, focusing and processing the light that reflects off objects, your eyes work in conjunction with your brain to allow you to see the world around you.

As light rays enter the eye, they first pass through the clear, protective cornea. Muscles in the iris (the colored part of the eye) contract or expand the pupil to adjust the amount of light entering the eye. The lens (a transparent, elastic structure) focuses the light to produce a sharp image on the retina (the layer of nerves lining the back of the eye). When light hits the retina, it is transformed into electrical signals that travel through the optic nerve to the brain, which interprets these signals as a visual image.

cataract clouds the lens of the eye, interfering with clear vision. A healthy lens, which consists primarily of water and protein, is transparent. With age, however, changes occur in the lens — including the clumping together of proteins and other chemical transformations — that can lead to the development of a cataract. The resulting opacity scatters the light entering the eye, so that the light reaching the retina is diffuse rather than focused and precise.

The extent of a cataract’s effect on vision depends largely on its location.

  • Cataracts covering the entire lens or those in the center of the lens (nuclear or posterior subcapsular cataracts, respectively) result in symptoms such as blurred vision, double vision and sensitivity to light and glare.
  • Cataracts located on the outer edge of the lens may cause only slight visual disturbances that might not be noticed.
